Cassava flour vs. rice flour: the flour swap that actually matters

You folded a rice-flour tortilla and it cracked along the seam, again. Or your gluten-free cake came out of the oven a little gritty on the tongue, the way rice flour always seems to leave things. Rice flour is cheap and it sits on every grocery shelf, which is exactly why so many gluten-free bakers default to it and then wonder why the results are inconsistent. Cassava flour, milled from the whole root we grow in Cameroon, is a different kind of gluten-free flour entirely. Not just a substitute. A different starting material.

One root, one grain, two different flours

Rice flour is milled from a grain. The husk and bran are polished away first, so what's left is mostly the starchy endosperm: a purified carbohydrate with a small amount of protein and very little fiber. Cassava flour starts from a root, not a grain, and it's processed differently. The tuber is peeled and milled whole. Nothing is polished off and nothing is extracted out. That means the fiber that runs through the root stays in the bag along with the starch.

This single fact, whole-root versus polished-grain, explains almost everything that follows: the taste, the way each flour drinks up liquid, and how each one holds together once it hits heat. Neither processing method is wrong. They're built for different jobs, and most gluten-free bakers have never had the difference explained in a way that changes what they reach for.

Why rice flour tastes rice-y and cassava flour doesn't

Bakers who've worked with both flours consistently describe rice flour as having a faint, gritty aftertaste, especially in delicate applications like a pale cake or a thin crepe where nothing else is around to mask it. Part of that comes from starch granule size. Rice starch granules are small and dense, and in a low-moisture bake they don't always fully hydrate, which is what leaves that slightly sandy texture behind on the tongue.

Cassava flour reads as close to flavor-neutral. It doesn't carry the nutty edge of oat flour or the sweetness of coconut flour, and it doesn't leave the graininess rice flour can. That neutrality matters more than it sounds like it should. In a pancake or a piecrust, the flour isn't supposed to announce itself. It's supposed to disappear behind the vanilla, the butter, the fruit. Rice flour, in anything delicate, often doesn't disappear all the way.

Fiber matrix vs. pure starch, and why it shows up in the crumb

Rice flour is close to pure starch, so a rice-flour bake tends to firm up and dry out fast as it cools; there isn't much else in the flour to hold onto moisture. Cassava flour keeps the fiber from the whole root, and that fiber binds water and slows the crumb from drying out. It's a structural difference, not a marketing one.

The numbers back up what your hands already notice in the bowl. Per 100 g, peer-reviewed proximate composition data puts the protein in our organic cassava flour and similar whole-root flours at roughly 1-2 g, while USDA FoodData Central lists white rice flour closer to 6-7 g. Fiber runs the other direction: cassava flour holds onto roughly 2-5 g of fiber per 100 g, versus about 1-2.4 g in white rice flour.

Neither number makes one flour "better." They tell you what each flour is built to do. A flour with more protein and less fiber, like rice flour, dries out and crisps up quickly under high heat, which is exactly the behavior you want from a coating. A flour with less protein and more fiber, like cassava, holds moisture and bends instead of shattering, which is exactly what a tortilla needs.

Water absorption and structure: why the swap isn't 1:1

Swap cassava flour into a recipe written for rice flour, cup for cup, and the batter will look wrong before it hits the pan. Lab measurements of water absorption capacity put cassava flour varieties at 159-308%, while a separate study measuring commercial white rice flour found it absorbing closer to 71%. Cassava flour, in other words, pulls in roughly two to four times as much liquid. That's the whole-root fiber again, holding onto water the purified rice starch simply can't.

In practice: a batter that looks perfect with rice flour will look thick and stiff with the same amount of cassava flour stirred in. Add liquid a tablespoon at a time until the consistency looks like the original recipe describes it, not like the measuring cup says it should.

Structure works the same way. Rice flour has almost no gluten-forming protein and almost no fiber to compensate, so on its own it usually needs backup: xanthan gum, extra egg, or a starch partner, to hold a bread or a pizza crust together. Cassava flour's higher fiber content gives it more built-in body, which is part of why it swaps close to 1:1 with wheat in pancakes, tortillas, and quick breads without extra binders. When to reach for cassava, when to reach for rice

Rice flour still earns its place in a kitchen. Its low water absorption and low protein make it genuinely useful where you want crispness and nothing else: dredging fried chicken, dusting a tempura batter, or lightening a delicate short cake where a fine, dry crumb is the goal. Reach for cassava flour when the recipe needs to hold together and taste like nothing at all. Tortillas and flatbreads, where pliability matters more than crispness. Soft sandwich breads and dinner rolls. Savory batters, dumpling wrappers, and anything pan-fried where you want a tender bite rather than a shattering one. Its water-holding fiber and near-1:1 wheat behavior do the heavy lifting in exactly those categories.

Some bakers keep both in the pantry and use each for what it's good at rather than picking a single winner. That's a reasonable outcome. The point of this comparison isn't to crown one flour. It's to stop the guesswork the next time a recipe doesn't come out the way the photo promised.
