Why your sourdough sank but your pancakes didn't
You read that cassava flour swaps 1:1 for wheat flour. You made pancakes. They were perfect. Then you made sourdough. The loaf came out dense, gummy, and flat, and you spent the next ten minutes wondering whether to return the bag.
The flour didn't fail you. The claim about 1:1 substitution is accurate for some recipes and wrong for others. The difference has nothing to do with cassava flour's quality and everything to do with what wheat flour was doing in the recipe you tried it in.
This post gives you a clear decision rule: figure out what role wheat plays in your recipe, and the right swap (or blend) becomes obvious. What gluten actually does in a recipe
Wheat flour contains two proteins, gliadin and glutenin. When you mix them with water, they form gluten, a stretchy elastic network. That network does different work depending on what you're baking.
In a yeast bread or sourdough, gluten is the load-bearing structure. As yeast ferments, it produces CO2. The gluten web traps those gas bubbles and holds them long enough for the bread to set in the oven. Remove the gluten network and the gas escapes. No rise. Dense crumb. That flat loaf you made was not a measurement error.
In a pancake, muffin, or tortilla, gluten plays a supporting role at best. Chemical leaveners (baking powder, baking soda) create lift quickly, and the batter sets before those gas bubbles have time to escape. The starch in the flour carries most of the structural work. Cassava flour is starch-forward, with enough fiber to hold moisture and give body. It does that job without gluten.
Cookies sit between the two. A chewy cookie needs some protein cross-linking for bite. A crisp shortbread does not. A flat drop cookie tolerates full cassava substitution. A dense chewy brownie cookie may need a small adjustment.
Research on wheat-cassava composite doughs confirms this pattern: as cassava flour replaced wheat flour, dough extensibility declined sharply and no visible gluten film formed once the blend reached 50% cassava. The gluten structure simply isn't there.
Why cassava flour absorbs more water than wheat
Cassava flour holds more moisture than wheat because it retains the fiber of the whole root, not just the starch fraction. Studies measuring water absorption capacity show cassava flour varieties absorbing significantly more water than wheat. In practice, this means your cassava batter will look thicker at the same liquid ratio. Add an extra tablespoon of liquid if your pancake batter looks too stiff to pour.
The substitution decision tree
Before you swap, ask one question: is gluten doing structural work in this recipe?
Step 1: Does the recipe use yeast or a long fermentation? If yes, gluten is your primary structure. A 1:1 cassava swap will produce a gummy, flat result. You need either a xanthan gum addition (typically 1/4 teaspoon per cup of flour) to mimic the gluten network, or a cassava-wheat blend where cassava stays at or below 30% of total flour weight. Step 2: Does the recipe rely on baking powder or baking soda as the only leavener? Quick breads, muffins, pancakes, and waffles all fall here. The leavening is chemical and fast. The structural demands on the flour are low. A 1:1 cassava swap works in most of these recipes with no adjustment.
Step 3: How much chew does the recipe expect? Cookies and flatbreads with no expected chew (shortbread, tortillas, crackers) handle a full cassava swap well. Recipes that rely on chew (bagels, pretzels, pizza dough) need gluten to build it. Start with a 25% cassava, 75% wheat blend and increase the cassava fraction from there.
A useful shorthand: if you'd be satisfied by a tender, moist crumb, cassava flour handles the 1:1 swap. If the recipe's appeal is elasticity, spring, or chew, you're in blend territory.

Where 1:1 genuinely works
These recipe categories handle a straight cup-for-cup cassava substitution without adjustment:
Pancakes and waffles. Chemical leaveners do the lift. Cassava flour's mild flavor and starch content produce a pale, tender pancake that holds together and doesn't taste noticeably different from wheat. Add a splash of extra liquid if the batter is unusually thick. Our organic cassava flour is milled from the whole root, so the starch and fiber are both in the bag.
Tortillas and flatbreads. Gluten's role in a tortilla is minimal (it's pressed flat, not left to rise). Cassava tortillas have been common across cassava-growing regions for generations. The texture is smooth, pliable, and slightly neutral in flavor.
Muffins and quick breads. Banana bread, pumpkin muffins, zucchini bread. Any recipe where the crumb should be moist and tender and the leavening is baking soda or baking powder. Cassava flour handles the 1:1 swap in these with good results.
Most drop cookies and shortbread. Where a light, tender texture is the goal. Denser cookies with lots of mix-ins (chocolate chips, nuts) work fine. Ultra-chewy cookies may need 25% of the cassava replaced with an egg or a touch of tapioca starch for bind.

Where you need to scale down or blend
Yeast-leavened bread. This is the hard case. A 100% cassava loaf produces a dense, gummy crumb because there is no gluten network to trap yeast-produced gases. Options: add xanthan gum (1/4 teaspoon per cup of cassava flour), use psyllium husk (1 tablespoon per cup), or keep cassava flour to 25-30% of the total blend with wheat making up the rest. Pasta. Wheat pasta dough relies heavily on gluten for elasticity and the ability to roll thin. Cassava pasta is possible with egg or a binding agent, but a direct 1:1 swap in a standard pasta recipe will produce dough that crumbles when you roll it.
Enriched doughs (croissants, brioche). These require gluten development to hold the layered structure. Not a 1:1 territory.
Crepes and thin batters. The 1:1 swap often works here, but cassava flour crepes cook faster and are more fragile on the pan. Reduce heat slightly and flip with confidence.
